My attempt at healthy eating ...

I am so hungry right now. Shane has been working late this week as they are super busy. Argo, I have to wait for tea! 

...So to help ease my hungry I thought I would recap on what I ate yesterday, hmmmm yuumy.

We always try and eat healthy, with the recommended amounts of fats, carbs and protein, and luckily I love vegetables so different vitamins is not an issues. Our issue is portion size, we're piggy! When you make yummy food it's hard to only eat a small amount of it. 

Yesterday we had sausages, with roast vegetables, baked sweet potato and bulgar wheat with quinoa. 

I started it off by chopping courgettes, onion, carrots, baby sweetcorn, long stem broccoli and mushrooms. I mixed them with sunflower oil, salt & pepper and added some fresh sage and thyme, and good two handfuls of. I roasted these in the over at 190°c for half an hour. 

For the sausages I have a roasting rack that i placed on top of the veggies, and I placed the sausages on top and cooked these for the same amount of time. I pricked the sausages first and this way the juices poor over the roast veg and gives them some more flavour. It also saves me from needing to turn the sausages half way through. For the baked sweet potato, I just wrapped it in foil and cooked it for an hour, at 190°c

The bulgar wheat and quinoa are new to me, I cooked 75 grams in 200 ml of water (this was for two of us) but to give it extra flavour I added a stock cube to the water, Whereas another option was to cook it plain and add sweet chili sauce afterwards, as sweet chili sauce also works well with the sweet potato, and feta cheese. 

Quick, simple and full of flavour!!
